Frozen Yoghurt – Breakfast, Dessert or Icy Pops Recipe

Servings: 4

Ingredients

  • 300 g frozen mixed organic berries
  • 1 frozen ripe banana (reduce if needing to lower the fructose. remember to peel first before freezing! Trust me)
  • 2 tbsp chia seed (crush into bran first in a high speed blender or thermomix to not get into your teeth. Leave them out if they aggravated your tummy)
  • 1 tbsp ground cinnamon*
  • 2 tsp beetroot powder (optional. The bioglan one is beautiful)
  • 6 heaped tbsp coconut or whole milk yoghurt (plus more for garnish if you want to be fancy!)

Instructions

  • Pop all in your high powered blender or Thermomix and blend 5 seconds (speed 6 TM)
  • Scrape down the sides
  • Repeat same step another 2-3 times to get it super smooth and creamy
  • Pour into glasses or bowls
  • Top with coconut yoghurt and a sprinkle of beetroot powder to garnish
  • OPTIONS: Make this your own. Skip the banana altogether if you want – I’d replace with a pasture raised / organic fed eggwhite so that you get a good ‘whip / creamy’ vibe in that case.
  • TOPPING OPTIONS: You could add crushed nuts and seeds, bee pollen… Whatever you fancy!
