In the coming weeks, we’re going to be looking at the Immune System with a few practitioners and specialists in this space – Dr. Gary Kaplan’s show from last month was wonderful to kick things off.

Today, I interview Bill Giles, Immunobiologist, Hypnotherapist, Yoga Teacher, and more, with over 3 decades of clinical experience supporting and optimising people’s immune function. Bill was a pioneer advocating for grain-free diets in the early 90s, co-founding the world’s first grain-free bakery and we talk about grains in today’s episode. We explore different foods and their effects on the immune system, from plants to animal proteins, fats and fish. We look at why fructose is such a harmful sugar but not necessarily to all people and look at how one might go about finding their signature diet for optimal health and immune function.

Questions I asked Bill:

  1. Foods don’t change but our bodies do as we age. The two most important changes are those to immune function and gastrointestinal function.
  2. Fructose is a hepatotoxin and causes mental and emotional dysfunction—one of the actions is through dysregulation of the default mode network with the central executive network of the brain.
  3. People can’t have balanced diets unless they have access to supermarkets with predictable food supplies all year.
  4. All plants have potential to change brain chemistry and this can influence health decisions. protein and fats don’t change brain chemistry.
  5. Signature diets are best adopted at the onset of immune senescence (between 35 and 40 years of age) to restrict the development of immune scarring, the reduction in immune competence overall through immune acclimatisation, and the occurrence of immune exhaustion.

About Bill Giles:

Bill Giles is an Immunobiologist, Yoga Instructor, Martial Arts Enthusiast, and advocate for people being responsible for their health through diet, exercise and mental wellbeing.

He has a background in engineering and science with more than 30 years consulting as a clinical immunobiologist. He has practiced hatha and raja yoga for almost 50 years and founded the Samyama School of Yoga. Supporting his formal qualifications is his ongoing interest in martial arts (more than 50 years now), along with decades of practicing Chinese Medicine, acupuncture, Oriental osteopathy and other complementary medicine techniques. After completing several thousand case studies that the effects of specific plant defence chemicals in our vegetables, salads, fruits and grains, have on the human adaptive immune system, along with Rob de Castella, Bill founded the Deeks Health Bakery in 2004. This was then the world’s first totally grain and gluten free bakery—the products of which have helped many people across Australasia to live a more normal life, despite their diagnosed chronic immune related diseases.

Helping people regain and maintain good health using biological and yoga principles has been a high priority in Bill’s life. He is an advocate of people being responsible for their health, and not relying totally on a medical system to “fix” them. He is passionate about teaching the tools and techniques to age gracefully; how to lift organ function; remove aches and pains, and how to unload, boost and refocus immune resources to always feel 20 years younger than other people.

Bill has published eight books on yoga and several self-help books on chronic immune-related illnesses. He created the 10-week Nada Program which uses both the internet and physical workshops to guide people on proven methods to achieve higher quality lives. In workshops, classes and seminars he continues to teach people lifestyle techniques, tools, and skills that improve their mental and physical health to live longer with better health and reach for their greatest potential.
